MOCA BISCOTTI

Moca biscotti is one of my favorite cookies.

'Biscotti' means 'baked in the oven twice' in Italian. So first, bake a dough shaping like a loaf of bread, and then cut it into slices and bake them in the oven again to make them crispy.

This biscotti is good for tea foods. Especially well matched with black tea and coffee.

The biscotti recipes on the internet only use white flour, so I modified it for more healthy, and richer flavor taste. I replace some of flour to almond flour, and coconut flour. But don't be afraid. If you don't have these ingredients or think it is bothersome, you can just put extra flour as the same amount. But I'm sure my recipe is worth to try it! Enjoy.

 

Ingredients (17-20 pieces)

-Butter 50g / Oil 25g

-Brown sugar 90g

-salt 1/4 tsp

-egg 2

-Flour( all purpose) 200g/ Almond flour 70g / coconut flour 25g

*or Flour 295g

-Baking powder 8g (2tsp)

-Vanila extract 1tsp

-topping ( mix nuts, choco chip)

-espresso 3Tsp (2 instant coffee)

Directions ( 70 mins)

1. Preheat oven to 356 degrees F(180 degrees C). put eggs and butter outside off the cooler at least 30mins ago. ( make them room temperature). Prepare melted butter. (put microwave for 30s)

2.measure all flours and whisk them well.

3.In a bowl, mix together butter(melted) , oil, and sugar until sugar is melted. Beat in eggs and vanilla extract. pour espresso in the mixture. stir it until ligh and fluffy.

4.Sift together all the flours,baking powder, and salt, toppings which you want.

( I recommand mix nuts, cranberry, choco chips.) mix into the egg mixture. Stir it.

5.Shape dough into a log approximately 12 inches long. Place log on baking sheet, and flatten out to about 1 inch thickness. ( If you want to make it smaller size, devide dough into 2 logs)

6. Bake for about 25 minutes in preheated oven, or until edges are golden and the center is firm. Remove from oven to cool on the pans. When loaf is cool enough to cut (put on the fridge about 15mins) , use a serrated knife to slice the loaf diagonally into 1/2 inch thick slices. Return the slices to the baking sheet.

7. Bake for an additional 15 minutes. Cool completely, and store in an airtight container at room temperature.
